Getting kids to eat their vegetables is a struggle in many homes. Disguising vegetables is one way to get kids interested enough to at least try something new. Corn Fritters are a great example of turning an ordinary vegetable into something extraordinary.

If you can turn some ordinary corn into Corn Fritters quickly and easily, you’ve got a solution to the problem. Just one easy Corn Fritters recipe that you can turn to when you need a vegetable that your kids will eat, is all you need to provide your kids with a balanced diet.

Once you learn the basics of how to make Corn Fritters, the rest is easy. You’ll want either a good heavy skillet or a deep fryer. A thermometer may come in handy, but you can also test the oil by dropping a little bit of batter in to make sure it sizzles before you begin frying an entire batch. Being creative and being sneaky may just go hand-in-hand when it comes to nutrition. Years from now when my kids ask why I was always making Corn Fritters, I’ll confess my deception.
