Smoked Turkey Breast with Collard Greens: Ingredients include: 1.5 pounds collard greens, pound smoked turkey breast, cup chicken broth, minced onion, tsp. red pepper flakes, tsp. minced celery, and tsp. ground black pepper. Place the cut up pieces of collard greens and turkey in a pot. Cover them with water and cook on medium heat, covered, for 20 minutes. Add the onion, celery, red pepper flakes, chicken broth, onion, red pepper flakes, and black pepper, and cook on medium heat for approximately an hour.

2. Peppercorn Honey Mustard Pork Roast: Ingredients include: 1- pound pork loin roast, 1 orange, a 12-oz package of cranberries, 1/4 cup honey, 2 tbsp. honey mustard, 2 tbsp. crushed peppercorns, 1/2 tsp. 1 tsp. minced thyme, and 1/2 tsp. salt. Chop up orange and cranberries. Place in saucepan and blend in honey. Bring to a boil over medium-high heat and cook 3 to 4 minutes. Cool. Place the pork around the roast in a roast cooking pot. Mix the honey mixture and other ingredients in a bowl. Baste the roast and pork with the sauce. Cook at 325 degrees for 30 minutes. Remove and baste the meat. Cook for another 20 minutes. Let it sit for about 15 minutes and then serve.

3. Honey Mustard Glazed Turkey: Ingredients include: 5 pound turkey breast , 1/4 cup apricot preserves, 1 tbsp. honey-style mustard. Place turkey breast in roast pan. Bake for 2 hours at 325 degrees. In a bowl, blend the mustard and apricot preserves. Baste the glaze over the turkey breast and cook for another 20 min. Remove and serve.

4. Rib Eye Roast with Gravy, Potatoes, and Mushrooms: 1 tbsp minced rosemary, 2 minced garlic gloves, 2 tsp salt, 1 tsp ground black pepper, one 4-pound rib eye roast, 4 pounds small potatoes (cut in small portions), 1 tbsp vegetable oil, 1 pound chopped white mushrooms, 1 tbsp butter, 1 tbsp all-purpose flour, 1 can beef broth, and 1 tbsp tomato paste. In a bowl, mix rosemary, garlic, and salt and pepper. Baste the roast. Cook for 40 minutes at 350F (175C). Add potatoes to the roast pan. Cook for another 20 minutes. Put mushrooms in the roast pan, swirl, and cook for another 40 minutes. Mix butter and flour together in a bowl. Remove roast and vegetables from oven. Remove food from the pan. Add beef broth to the pan juices, boil, and cook for 2 minutes. Reduce the heat and mix in flour mixture and tomato paste, and blend. Pour the gravy in a bowl. Slice beef and serve with gravy, potatoes and gravy.

Apple Crisp Recipe; A Family Dessert Everyone Will Love

Apple crisp is a term used in the United States as an apple dessert that is made of apples and has a slightly hard and crunchy crust on the top. In the United Kingdom it is called apple crumble and both are made with apples, butter, sugar or brown sugar, flour or oats, cinnamon, ginger and nutmeg. It isn’t a dish that was served to guests or at holidays but an apple crisp recipe makes a nice everyday peasant kind of dish that was served to the family.

Sometimes apple crisp is mistaken for a few other desserts using apple. An apple pudding that is made by layers of apples and sweetened crumbs of bread or saltines with a sauce is called Apple Brown Betty. Another dessert that is similar is Apple cobbler, also called apple grunt, slump or pandowdy that places biscuit dough over the apples and baked.

Apple crisp was probably made for centuries before the first recipe was presented in the’96 Fannie Farmer Cook Book. The dessert was popular during autumn probably because apples ripen and are plentiful at that time. The good thing is it can also be made any time of the year by using canned apples. Many times it was made with whatever fruit was in season at the time like peaches or berries.

Cooking apples are what is needed to make apple crisp. These apples are tart and much more firm than some others because they need to keep their shape while cooking. Use Granny Smith apples, Northern Spye variety, Winesap, Jonathan or MacIntosh to make your apple crisp.

An easy method of making apple crisp is made by peeling and slicing six large apples, and using three fourths of a cup of old fashion oatmeal, one half of a cup of brown sugar that is packed tight, one half of a cup flour, one half of a teaspoon of cinnamon and six tablespoons of butter that is at room temperature. The apples need to be cored and sliced and placed in a 9 inch square baking pan slathered with butter so the apples won’t stick once it is baked. The other ingredients should be mixed with a pastry cutter or forks so that it eventually looks like fine meal and then it is spread over top of the apples. Cook the apple crisp in a 350 degree F oven for 30 to 40 minutes or until the crust is brown and it is bubbly. Remove it from the oven to cool a little bit. Cut it into squares and serve while it is still warm with vanilla ice cream. Whipped cream is also an option for enhancing the dish.

Cheese and apple pie is a delicacy in some areas so why not make an apple crisp with a little Cheddar. Core, peel and slice 6 apples putting them in a 9 inch square baking dish. Sprinkle with one third teaspoon of ground cinnamon then add 6 teaspoons of apple juice. In a bowl combine one half stick of softened butter, three fourths cup of granulated sugar, one teaspoon fresh lemon juice, one eighth teaspoon of salt, and one half cup of all purpose flour. Use a pastry cutter or two knives to cut the butter into the rest of the ingredients to make a crumbly texture. Add one fourth pound shredded Cheddar and mix in. Crumble it over the apple mixture and place in a 350 degree F oven for 40 minutes or until the contents starts to bubble and the crust turns golden brown. Make sure to serve this warm and ice cream does go well with it.

Believe it or not you can make apple crisp with zucchini and it tastes like apples. What a great way to get the kids to eat vegetables. Place five cups of peeled, seeded and sliced zucchini a saucepan. Add one third cup of granulated sugar, one fourth cup of lemon juice, 1 teaspoon of cinnamon and three fourths cup apple cider or apple juice. Bring it to a boil then simmer for about 10 or 15 minutes or until the zucchini is soft and tender. Pour it into a greased pie pan for deep dish pies. Now, in a bowl combine 6 tablespoons of softened butter, one fourth teaspoon of salt, 1 teaspoon of baking powder, one cup of flour, and one half cup of brown sugar. Using a pastry cutter or two knives cut the mixture in to make a course meal and spread it over the zucchini. Bake for 40 to 45 minutes in a 350 degree F oven. Serve it warm with ice cream. You won’t believe it until you try it.

Simple And Quick Thanksgiving Recipes

Food is the center of attention at Thanksgiving. Hard work in a new world led to success and to this celebration. Every year it’s a traditional meal. Turkey, sometimes ham, mashed potatoes, stuffing, cranberry sauce, rolls or bread, pumpkin pie and apple pie, and a variety of other trimmings adorn the holiday table. It’s a time when families get together to celebrate history. But just like the colors of the leaves, Thanksgiving dinner recipes can be an amazing variety.

Why not try the following appetizer? It’s a pretty simple Pumpkin soup. Add butter and oil to a pan over medium heat. Saute the white part of the leeks in this until they’re soft. Add 15 ounces of pumpkin puree, a pinch of cloves, one tablespoon of ground cinnamon, one teaspoon of ground ginger, and a pinch of salt. Now stir in some vegetable broth. Add brown sugar. Use low heat to simmer it for 10 minutes. Cream or half and half are optional, along with a pinch of cinnamon on top of each bowl. Mmmm boy that’s delicious.

For the main course try frying the turkey instead of broiling it. It won’t get greasy. The oil is so hot it doesn’t flow into the meat. Get a big drum and a propane burner, otherwise known as a deep fryer. A meat thermometer is also needed, along with a deep fry thermometer to check the oil for the correct temperature. Make sure to fry outside in a clear area. The oil must be between 325F and 350F. Cook it for 3 minutes per pound, until the breast is 170F. Dressing isn’t fried inside the turkey, but spices can be injected into it.

Try hazelnut pumpkin soup or a butternut squash stuffing. But there are other good appetizers for the meal. Cheese wrapped asparagus is delicious. Both sliced and spread cheese go into this one. One idea is swiss cheese slices with a softer blue cheese spread. Wrap the asparagus with the slices spread with the soft cheese, then bake until tender at 230C. The asparagus prepared this way loses its health appeal. But Thanksgiving isn’t a time for a diet. Live a little!
